Maple Cinnamon Roasted Breakfast Sweet Potatoes

2 medium sweet potatoes, peeled and cut into 1-inch cubes

3 tablespoons extra virgin olive oil

2 tablespoons pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon freshly grated nutmeg (optional)

1/2 teaspoon sea salt

1/4 teaspoon freshly cracked black pepper

1/4 cup pecans, roughly chopped

1/4 cup dried cranberries

Fresh parsley or thyme, for garnish (optional)

Preheat the Oven: Start by preheating your oven to 400°F (200°C). To make cleanup easier, line a baking sheet with parchment paper.

    Prepare the Sweet Potatoes: In a large mixing bowl, combine the diced sweet potatoes, 3 tablespoons of olive oil, 2 tablespoons of maple syrup, 1 teaspoon of ground cinnamon, nutmeg (if you're using it), sea salt, and black pepper. Use a large spoon or spatula to toss the ingredients together until the sweet potato cubes are fully coated with the mixture.

      Spread on Baking Sheet: Carefully transfer the sweet potato mixture onto the prepared baking sheet, ensuring they are spread out in a single layer. This helps them roast evenly and develop a nice caramelization.

        Roast the Sweet Potatoes: Place the baking sheet into the preheated oven and roast the sweet potatoes for 25-30 minutes. They're done when they're fork-tender and have a beautiful golden-brown exterior. Remember to stir the sweet potatoes halfway through the roasting time to promote even cooking.
