Ingredients

2 large apples (recommendations: Honeycrisp or Fuji), cored and diced into bite-sized pieces

1/4 cup pure maple syrup (plus extra for drizzling, if desired)

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 cup rolled oats

1/2 cup almond flour (substitute with regular all-purpose flour if preferred)

1/3 cup unsweetened shredded coconut

1/4 cup chopped walnuts or pecans (optional for added crunch)

1 tablespoon coconut oil, melted

Pinch of sea salt

1/2 teaspoon pure vanilla extract

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.

Prepare the Apples: In a large mixing bowl, combine the diced apples with 2 tablespoons of maple syrup, ground cinnamon, and ground nutmeg. Toss gently until the apple pieces are evenly coated in the mixture.

Make the Oat Mixture: In another bowl, combine the rolled oats, almond flour, unsweetened shredded coconut, chopped walnuts or pecans (if using), melted coconut oil, a pinch of sea salt, vanilla extract, and the remaining 2 tablespoons of maple syrup. Stir until all the ingredients are fully integrated and form a cohesive mixture.

Combine Ingredients: Carefully fold the prepared apple mixture into the oat mixture. Gently mix together until all components are well combined and evenly distributed.

Shape the Bites: Using a tablespoon, scoop out portions of the mixture and roll them into small, bite-sized balls (about 1 inch in diameter). Arrange them on the prepared baking sheet, making sure to leave about 1 inch of space between each snack bite.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the bites are golden brown and smell wonderfully fragrant.

Cool and Drizzle: Once baked, remove the snack bites from the oven and let them cool on the baking sheet for about 5 minutes. Drizzle with additional maple syrup if you desire an extra touch of sweetness.

Serve and Enjoy: Enjoy these delightful bites warm or at room temperature. They make for a perfect afternoon snack or a wholesome dessert option!
