1 package (8 oz) refrigerated crescent roll dough

6 oz deli ham, thinly sliced

6 oz sharp cheddar cheese, shredded

2 tablespoons Dijon mustard

1 egg, beaten (for egg wash)

1 teaspoon fresh thyme leaves (optional)

Salt and freshly ground black pepper, to taste

All-purpose flour, for dusting

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.

    Prepare the Dough: On a clean, lightly floured surface, carefully unroll the crescent roll dough. Separate the dough into individual triangles along the perforated lines. To create a more cohesive pastry, pinch the seams together where they are perforated.

      Assemble the Filling: Take a small spoon and spread approximately 1/2 teaspoon of Dijon mustard on the base of each triangle. Layer on 1-2 slices of the deli ham followed by a generous handful of shredded sharp cheddar cheese.

        Shape the Croissants: Starting from the wide end of each triangle, gently roll the dough towards the pointed end to form a crescent shape. After rolling, bend the ends of the roll towards each other to form a circular shape, ensuring the ham and cheese filling is snugly encased.

          Apply the Egg Wash: Arrange the mini ham and cheese croissant circles on the lined baking sheet. With a pastry brush, apply the beaten egg wash generously over the tops of each croissant. If desired, sprinkle fresh thyme leaves on top and season lightly with salt and freshly cracked black pepper.
