1 cup Arborio rice

3 cups vegetable broth

2 cups mixed mushrooms (cremini, shiitake, and button), sliced

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it’s ready for baking when you finish preparing the dish.

    Sauté the Vegetables: In a large skillet, heat the olive oil and butter over medium heat. Once the butter is melted, add the diced onion. Sauté for approximately 5 minutes, or until the onions turn translucent. Then, add the minced garlic and continuing cooking for another minute, allowing its aroma to fill the kitchen.

      Cook the Mushrooms: Introduce the sliced mushrooms into the skillet. Season them with salt, pepper, and fresh thyme. Cook, stirring occasionally, for about 7-8 minutes until the mushrooms are tender and have released their moisture.

        Prepare the Rice: Add the Arborio rice to the skillet. Stir frequently for 2-3 minutes, allowing the rice grains to toast slightly while absorbing the flavorful oils from the vegetables.

          Add Broth: Gradually pour in the vegetable broth, stirring gently. Bring the mixture to a gentle simmer, letting it cook for about 10 minutes. Stir occasionally, until the rice has absorbed a portion of the broth but is still slightly al dente.

            Combine with Cheese: Remove the skillet from the heat. Stir in half of the grated mozzarella and half of the grated Parmesan cheese. Mix well until the cheeses are melted and thoroughly blended into the rice mixture.
