2 cups elbow macaroni

4 cups vegetable broth

1 cup ripe peaches, diced (fresh or canned, well-drained)

1 cup sharp cheddar cheese, freshly shredded

1 cup Gruyère cheese, freshly shredded

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

1/4 cup fresh basil, chopped (for garnish)

1/4 cup breadcrumbs (optional, for topping)

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Once the oil is shimmering, add the diced peaches. Sauté for about 2-3 minutes until the peaches begin to soften and develop a light caramelization.
