2 fresh tuna steaks (approximately 6 oz each)

2 ripe peaches, pitted and diced

1/4 cup peach preserves

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon fresh ginger, finely grated

1 garlic clove, minced

1 tablespoon olive oil

Salt and pepper, to taste

Fresh cilantro or basil leaves, for garnish (optional)

Lime wedges, for serving

Prepare the Marinade: In a small mixing bowl, combine the peach preserves, soy sauce, rice vinegar, freshly grated ginger, and minced garlic. Stir the mixture until all ingredients are well incorporated and the preserves are fully dissolved.

    Marinate the Tuna: Place the tuna steaks in a shallow dish or a resealable plastic bag. Pour half of the peach glaze over the steaks, ensuring they are well coated. Turn the steaks to cover the other side. Cover the dish or seal the bag, then refrigerate for at least 30 minutes to enhance the flavor.

      Prepare the Peaches: In a separate bowl, gently toss the diced peaches with a pinch of salt and a squeeze of fresh lime juice. Set this mixture aside to allow the flavors to meld.
