8 oz elbow macaroni

2 ripe peaches, diced

2 tbsp unsalted butter

1 small onion, diced

2 cloves garlic, minced

2 cups sharp cheddar cheese, shredded

1 cup goat cheese, crumbled

2 cups milk (whole or 2%)

1/4 cup all-purpose flour

1 tsp Dijon mustard

1/2 tsp smoked paprika

Salt and freshly ground black pepper to taste

1/2 cup breadcrumbs

1 tbsp fresh basil, chopped (for garnish)

Instructions
 

Cook the macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Once cooked, drain the macaroni and set it aside.

    Sauté the aromatics: In a large saucepan over medium heat, melt the unsalted butter. Add the diced onion and sauté for about 3-4 minutes, or until the onion is translucent. Stir in the minced garlic and cook for an additional minute until it becomes fragrant.

      Make the cheese sauce: Sprinkle the all-purpose flour over the onion and garlic mixture, stirring continuously to form a roux. Cook this for 1-2 minutes to remove the raw flour taste. Gradually whisk in the milk, ensuring you stir constantly to prevent lumps from forming. Continue cooking until the mixture thickens and starts to bubble, approximately 5-7 minutes.

        Incorporate the cheeses and spices: Once the sauce has thickened, remove the saucepan from the heat. Stir in the shredded sharp cheddar cheese, crumbled goat cheese, Dijon mustard, smoked paprika, and a generous pinch of salt and pepper. Mix thoroughly until all the cheese has melted and the sauce is smooth.

          Combine everything: Return the cooked macaroni to the saucepan, gently folding it into the cheese sauce. Add the diced peaches, and stir until everything is evenly coated.

            Prepare for baking: Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13 inch baking dish, spreading it out evenly.
