Pumpkin Cinnamon Rolls

For the Dough:

4 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1 cup warm milk (110°F)

½ cup pumpkin puree

⅓ cup granulated sugar

¼ cup unsalted butter, melted

1 large egg

1 tsp salt

1 tsp ground cinnamon

¼ tsp nutmeg (optional)

For the Cinnamon Filling:

1 cup brown sugar, packed

3 tbsp ground cinnamon

¼ cup unsalted butter, softened

½ cup chopped pecans or walnuts (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

1-2 tbsp milk (to adjust consistency)

Instructions
 

Prepare the Dough:

    - In a large bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

      - Add the pumpkin puree, melted butter, egg, salt, cinnamon, nutmeg, and half of the flour. Mix until combined.

        - Gradually add the remaining flour until you form a soft dough. Knead on a floured surface for about 5-7 minutes until smooth and elastic.

          Let It Rise:

            - Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

              Prepare the Filling:

                - In a bowl, mix brown sugar and cinnamon. Set aside. If using, chop the nuts and add them into the mixture.

                  Roll Out the Dough:

                    - After the dough has risen, punch it down and roll it out on a floured surface into a rectangle (about 16x12 inches).

                      - Spread the softened butter over the dough and evenly sprinkle the cinnamon-sugar mixture on top. If using, sprinkle nuts over the filling.

                        Shape the Rolls:

                          - Starting from one long edge, tightly roll the dough into a log. Pinch the seam to seal. Cut the log into 12 equal pieces.

                            Second Rise:

                              - Place the rolls in a greased baking dish, cover, and let them rise again for about 30-45 minutes until they puff up.

                                Bake:

                                  - Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until golden brown and cooked through.

                                    Make Cream Cheese Frosting:

                                      - While rolls are baking, beat cream cheese and softened butter until smooth. Gradually add powdered sugar, mixing until combined. Stir in vanilla extract and enough milk to reach desired consistency.

                                        Frost and Serve:

                                          - Once the rolls are out of the oven, let them cool for about 10 minutes. Generously spread the cream cheese frosting over the warm rolls and serve.
