2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp ground ginger

1/4 tsp ground cloves

1/2 tsp salt

1 cup granulated sugar

1/2 cup packed brown sugar

1 cup vegetable oil

4 large eggs

1 can (15 oz) pure pumpkin puree

1 tsp vanilla extract

1 cup chopped pecans (lightly toasted for enhanced flavor)

For the Pecan Praline Topping:

1 cup light brown sugar

1/2 cup unsalted butter (1 stick)

1/2 cup heavy cream

1 cup chopped pecans (lightly toasted)

1 tsp vanilla extract

Optional for Serving:

Whipped cream

Additional pecans for garnish

Preheat and Prepare Cake Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper to prevent sticking.

    Mix Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, ground cloves, and salt until well combined. Set this mixture aside for later use.

      Cream the Sugars and Oil: In a large mixing bowl, combine the granulated sugar, packed brown sugar, and vegetable oil. Using an electric mixer on medium speed, beat the mixture until it is smooth and glossy. Incorporate the eggs one at a time, beating well after each addition to ensure everything is fully integrated.

        Add Pumpkin and Vanilla: Stir in the pure pumpkin puree and vanilla extract into the sugar mixture, mixing until everything is evenly combined.

          Combine Dry and Wet Ingredients: Gradually add the previously prepared dry ingredient mixture to the pumpkin mixture. Mix on low speed just until combined; be cautious not to overmix. Gently fold in the toasted pecans using a spatula or wooden spoon.

              Prepare the Pecan Praline Topping: In a medium saucepan over medium heat, combine the light brown sugar, unsalted butter, and heavy cream. Once thickened, remove from heat and stir in the toasted pecans and vanilla extract. Allow the topping to cool slightly before using.

                Assemble the Cake: On a serving plate, place one layer of the cooled cake. Generously spread a layer of the pecan praline topping on top of this layer. Carefully place the second layer of cake over it, then pour the remaining praline topping over the entire cake, allowing it to cascade down the sides for an appealing presentation.
