1 box spice cake mix (or homemade if preferred)

1 cup canned pumpkin puree

3 large eggs

1/3 cup vegetable oil

1 teaspoon vanilla extract

1 tablespoon pumpkin pie spice (plus extra for coating)

For the Coating:

16 oz white chocolate or candy melts

1 tablespoon coconut oil (optional, for thinning)

Sprinkles or crushed nuts for decorating (optional)

For the Cream Cheese Frosting (optional):

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 teaspoon vanilla extract

2 cups powdered sugar

1 tablespoon milk (to adjust consistency)

Instructions
 

Bake the Cake:

    - Begin by preheating your oven to 350°F (175°C).

      - In a large mixing bowl, combine the spice cake mix, pumpkin puree, eggs, vegetable oil, and vanilla extract. Whisk or mix until the batter is smooth and all ingredients are fully incorporated.

        - Grease a 9x13 inch cake pan, then pour the cake batter into the prepared pan. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

          - Allow the cake to cool in the pan for approximately 30 minutes. Then, carefully transfer it to a wire rack to cool completely.

            Prepare the Cake Crumble:

              - Once the cake has cooled completely, crumble it into a large bowl using your hands or a fork until you achieve a fine crumb texture.

                - If you choose to use the cream cheese frosting, beat together the softened cream cheese and butter in a separate mixing bowl until creamy and smooth. Gradually add the powdered sugar, followed by the vanilla extract and milk, mixing until the frosting is fluffy.

                  - Incorporate about 1 cup of the cream cheese frosting into the cake crumbles. Adjust the amount of frosting as necessary until the mixture holds together well enough to form a ball.

                      - Scoop approximately 1 to 2 tablespoons of the cake mixture and roll it into a neat ball. Place each cake ball on a baking sheet lined with parchment paper. Repeat the process until all the mixture is utilized.

                        - Gently insert a lollipop stick into each cake ball, pushing it halfway through. Freeze the cake pops for a minimum of 30 minutes to help them firm up.

                          Melt the Coating:

                            - In a microwave-safe bowl, melt the white chocolate or candy melts. Heat it in 30-second intervals, stirring in between each interval, until completely melted and smooth. If you find that the coating is too thick, stir in 1 tablespoon of coconut oil to achieve a thin, dippable consistency.

                              Coat the Cake Pops:

                                - Remove the cake pops from the freezer. Dip each cake pop into the melted coating, allowing any excess chocolate to drip off back into the bowl. If you like, sprinkle a pinch of pumpkin pie spice over the coating while it's still wet for an added flavor kick.

                                  - Place the coated cake pops back on the parchment-lined baking sheet. For easy drying, you can also insert them upright into a foam block.

                                    Decorate and Serve:
