4 bone-in, skin-on chicken thighs

1 head of garlic

2 tablespoons olive oil (plus extra for roasting garlic)

2 teaspoons fresh rosemary, finely chopped

1 teaspoon fresh thyme, finely chopped

1 teaspoon dried oregano

1 teaspoon paprika

Salt and freshly cracked black pepper, to taste

Juice of 1 lemon (about 2 tablespoons)

1 tablespoon balsamic vinegar

½ cup chicken broth

Fresh parsley, chopped, for garnish

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to ensure it’s hot and ready for roasting.

    Prepare the Garlic: Take the head of garlic and slice off the top (about 1/4 inch) to expose the cloves. Drizzle the exposed garlic with a bit of olive oil, wrap it tightly in aluminum foil, and place it in the oven to roast for approximately 30-35 minutes until soft and fragrant.

      Mix the Herb Seasoning: In a small mixing bowl, combine 2 tablespoons of olive oil with finely chopped rosemary, thyme, oregano, paprika, a generous pinch of salt, freshly cracked black pepper, lemon juice, and balsamic vinegar. Whisk the mixture until well blended.
