2 medium zucchinis, thinly sliced

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons fresh basil, chopped (or substitute with 1 tablespoon dried basil)

1 tablespoon fresh thyme leaves (or use 1 teaspoon dried thyme)

2 tablespoons extra-virgin olive oil

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This ensures your dish cooks evenly and achieves the perfect texture.

    Prepare the Baking Dish: Take a 9x13 inch baking dish and lightly grease it with a bit of extra-virgin olive oil to prevent sticking.

      Layer the Vegetables: Start with half of the sliced zucchini, arranging them evenly on the bottom of the prepared baking dish. Next, layer half of the sliced tomatoes on top of the zucchini for a colorful base.

        Season the Layers: Sprinkle half of the minced garlic, all of the fresh basil, and thyme over your zucchini and tomato base. Lightly season with salt and freshly cracked black pepper to enhance the flavors.

          Repeat Layers: Now, add a second layer by repeating the procedure with the remaining zucchini slices, followed by the rest of the sliced tomatoes, garlic, basil, and thyme. Don’t forget to season the second layer lightly as well.
