Ingredients

For the Salmon Skewers:

1 lb (450g) salmon fillet, skin removed

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Skewers (soaked in water for 30 minutes if using wooden skewers)

For the Mango Salsa:

1 ripe mango, diced into small cubes

1/2 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions

Prepare the Marinade for the Salmon: In a medium bowl, whisk together the olive oil, minced garlic, smoked paprika, dried oregano, and a pinch of salt and pepper until well combined.

Cube the Salmon: Cut the salmon fillet into 1-inch cubes for even cooking. Gently add these salmon cubes to the marinade, ensuring each piece is well-coated. Allow it to marinate in the refrigerator for at least 30 minutes, letting the flavors soak in.

Make the Mango Salsa: In a separate bowl, combine the diced mango, finely chopped red onion, minced jalapeño, and chopped cilantro. Squeeze the lime juice over the top, season with salt to taste, and toss all the ingredients together gently. Let the salsa sit for a few minutes to allow the flavors to meld perfectly.

Assemble the Skewers: Thread the marinated salmon cubes onto the soaked skewers, ensuring to leave a small gap between each piece. This helps the salmon cook evenly.

Preheat the Grill: Heat your grill or grill pan to medium-high heat. For best results, lightly brush the grill grates with oil to prevent the salmon from sticking.

Grill the Salmon Skewers: Place the skewers on the preheated grill. Cook for about 2-3 minutes on each side, flipping gently until the salmon is opaque and flakes apart easily when tested with a fork. Be cautious not to overcook, as salmon can become dry.

Serve: Once grilled to perfection, remove the skewers from the grill. Serve them immediately while still hot, topped generously with the refreshing mango salsa for a delightful contrast in flavors.

                Prep Time, Total Time, Servings:

                  15 minutes | 1 hour (including marinating time) | Serves 4

Presentation Tips: Serve the skewers on a platter lined with fresh lettuce or banana leaves and scatter extra mango salsa around the sides. Garnish with lime wedges for a pop of color and an extra zing!
