Instructions

Prepare the Salmon:

    - Preheat your grill or skillet over medium-high heat to ensure even cooking.

      - In a small bowl, combine the olive oil, smoked paprika, garlic powder, ground cumin, cayenne pepper, salt, black pepper, and lime juice. Whisk until well blended.

        - Coat the salmon fillet on all sides with the spice mixture, ensuring it is evenly covered.

          - Grill or pan-sear the salmon for about 6-8 minutes on each side, or until it is cooked through and flakes easily with a fork. Once fully cooked, transfer it to a plate and let it rest for a few minutes.

            Make the Cherry Slaw:

              - In a large mixing bowl, add the finely shredded red cabbage, chopped cherries, julienned carrots, and chopped cilantro.

                - In a separate small bowl, whisk together the honey, apple cider vinegar, lime juice, and a pinch of salt. Pour this dressing over the slaw mix and toss until all the ingredients are well coated. Let it sit for a few minutes to allow the flavors to meld.

                  Prepare the Tortillas:

                    - Warm the corn tortillas by placing them on the grill or in a skillet. Heat each side for about 30 seconds, or until they are warm and pliable but not crispy.

                      Assemble the Tacos:

                        - Flake the grilled salmon into bite-sized pieces using a fork.

                          - On each warm tortilla, add a portion of the flaked salmon followed by a generous scoop of cherry slaw to create a colorful and flavorful filling.

                            Garnish and Serve:

                              - If desired, gently place avocado slices on top of the tacos and sprinkle with additional chopped cilantro for an extra burst of flavor.

                                - Serve with lime wedges on the side for guests to squeeze fresh lime juice over their tacos just before enjoying.
