1 lb (450g) carrots, peeled and sliced into rounds

1 tablespoon olive oil or coconut oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

4 cups vegetable broth

1 can (14 oz) coconut milk

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric

Salt and black pepper, to taste

Juice of 1 lime

Fresh cilantro leaves, for garnish

Sauté Aromatics: In a large pot, heat the olive oil or coconut oil over medium heat. Once hot, add the finely chopped onion. Sauté until the onion becomes translucent and soft, approximately 5 minutes. Next, add the minced garlic and grated ginger. Continue to cook for another 1-2 minutes, allowing the mixture to become fragrant.

    Cook Carrots: Add the sliced carrots to the pot along with the ground cumin, ground coriander, and turmeric. Stir well to ensure the carrots are evenly coated with the spices. Let them cook for about 5 minutes, stirring occasionally, until the carrots start to soften.

      Add Broth: Pour the vegetable broth into the pot and increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to a low simmer and cover the pot. Allow it to simmer for 20-25 minutes, or until the carrots are tender and easily pierced with a fork.

        Blend the Soup: Once the carrots are tender, remove the pot from the heat. Using an immersion blender, carefully blend the soup until it reaches a smooth and creamy consistency. If you don’t have an immersion blender, you may blend the soup in batches using a countertop blender, taking care to allow it to cool slightly if necessary.

          Incorporate Coconut Milk: Return the blended soup to low heat and stir in the coconut milk. Taste and adjust seasoning with salt and black pepper as needed. Allow the soup to warm through for another 5 minutes while stirring gently.
