2 cups cooked jasmine rice (preferably day-old for best texture)

1 lb pork tenderloin, thinly sliced into bite-sized pieces

2 tablespoons soy sauce (plus extra for drizzling)

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ground black pepper

2 tablespoons vegetable oil (divided)

1 cup mixed vegetables (a blend of peas, diced carrots, and corn)

3 green onions, finely chopped (keep some for garnish)

3 cloves garlic, minced

2 eggs, lightly beaten

Fresh cilantro for garnish

Lime wedges for serving

Marinate the Pork: In a mixing bowl, combine the sliced pork tenderloin with soy sauce, oyster sauce, sesame oil, garlic powder, and black pepper. Mix thoroughly to coat the pork evenly. Allow it to marinate for at least 20 minutes while you prepare the other ingredients.

    Prepare the Vegetables: While the pork is marinating, wash and chop the green onions and garlic. Prepare your mixed vegetables by having them ready to go.

      Cook the Pork: Heat 1 tablespoon of vegetable oil in a large wok or non-stick skillet over medium-high heat. Once hot, add the marinated pork to the pan. Stir-fry for about 5-7 minutes, or until the pork is fully cooked and has developed a nice caramelization. Once done, remove the pork from the pan and set it aside.

              Season & Toss: If desired, drizzle on additional soy sauce for flavor. Toss everything together, stir-frying for another 3-5 minutes until all ingredients are well combined and heated through. Taste and adjust seasoning with salt if needed.

                Garnish & Serve: Remove the pan from heat. Sprinkle a generous amount of chopped green onions and fresh cilantro over the fried rice. Serve hot, accompanied by lime wedges for a refreshing zest.
