2 cups fresh spinach, finely chopped

1 cup ricotta cheese

1/2 cup feta cheese, crumbled

1/4 cup grated Parmesan cheese

1 egg, beaten (for egg wash)

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon ground nutmeg (optional)

1 tablespoon fresh lemon juice

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.

    Sauté the Spinach: In a medium skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 1 minute until it becomes fragrant. Then, add the chopped spinach and continue cooking until it wilts, which should take about 2-3 minutes. Once wilted, remove from heat and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, crumbled feta, grated Parmesan, the sautéed spinach, salt, black pepper, nutmeg (if using), and fresh lemon juice. Stir thoroughly until everything is well mixed and creamy.

        Roll Out the Pastry: On a clean, lightly floured surface, roll out the thawed puff pastry sheet to ensure it is smooth and even. Cut the pastry into squares or circles, each measuring about 4 inches in size.
