Ingredients

1 lb ground turkey

2 cups fresh spinach, roughly chopped

8 large eggs

1/2 cup milk (can use dairy or a non-dairy alternative)

1 cup shredded cheddar cheese

1 small onion, finely diced

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for added heat)

Cooking spray or olive oil for greasing the baking dish

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). While the oven is heating, take a 9x13-inch baking dish and lightly grease it with either cooking spray or a drizzle of olive oil. Set this aside for later use.

Cook the Turkey: In a large skillet, heat over medium-high heat and add the ground turkey. Use a spatula to break the turkey apart as it cooks, continuing until it's browned and no longer pink, which takes about 5-7 minutes. If there is any excess fat, ensure to drain it from the skillet.

Add Aromatics: Into the skillet with the cooked turkey, add the diced onion and minced garlic. Sauté these for approximately 3-4 minutes, stirring frequently until the onion becomes translucent and the mixture is aromatic.

Incorporate Spinach: Stir in the chopped spinach, continuing to cook for an additional 2-3 minutes until the spinach is wilted and tender. Once done, remove the skillet from heat.

Whisk Eggs: In a large mixing bowl, crack the eggs and add the milk. Whisk the mixture until well combined. Then, mix in the dried oregano, salt, black pepper, and red pepper flakes if using.

Combine Ingredients: Pour the turkey and spinach mixture from the skillet into the bowl containing the egg mixture. Gently fold everything together, then sprinkle in the shredded cheddar cheese and fold it in until evenly distributed.

Pour into Dish: Carefully pour the complete mixture into your prepared baking dish, leveling it out with a spatula to ensure even cooking.

Bake: Place your baking dish in the preheated oven. Bake for 30-35 minutes or until the egg bake is fully set and the top has developed a light golden color.

Cool and Serve: Once baked, allow the egg bake to cool for about 5 minutes before slicing it into squares. Serve warm and savor the deliciousness!
