Salmon is not just a delicious choice; it is a powerhouse of nutrition. This fatty fish is rich in high-quality protein, essential vitamins, and minerals, making it a staple in many healthy eating plans. One of the standout features of salmon is its abundance of omega-3 fatty acids—specifically EPA and DHA—which are crucial for heart health. Ingredients

4 salmon fillets (6 oz each)

1 large head of broccoli, cut into bite-sized florets

3 tablespoons honey

3 tablespoons Dijon mustard

2 tablespoons extra virgin olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and freshly ground pepper to taste

1 lemon, sliced into thin rounds

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper to make cleanup a breeze.

In a small mixing bowl, combine honey, Dijon mustard, minced garlic, smoked paprika, olive oil, and a sprinkle of salt and pepper. Whisk until everything is well blended to create a flavorful marinade.

Position the salmon fillets in the middle of the prepared sheet pan. Generously pour half of the honey mustard mixture over the salmon, using a basting brush or the back of a spoon to ensure a thorough and even coating.

In a separate mixing bowl, toss the broccoli florets with the remaining honey mustard mixture until they are evenly coated. Spread the broccoli around the salmon on the sheet pan, creating a vibrant arrangement.

Place the lemon slices on top of both the salmon and broccoli. This not only enhances flavor but also adds a beautiful touch to your dish.

Transfer the sheet pan to the preheated oven and bake for 15-20 minutes. The salmon should be cooked through and flake easily with a fork, while the broccoli should become tender with a crisp texture.

Once cooked, remove the sheet pan from the oven and allow it to rest for a few minutes. If desired, garnish with freshly chopped parsley to add a pop of color and freshness.

Serve your delicious one-pan meal immediately, and savor the delightful flavors of honey mustard with salmon and broccoli!
