2 ripe peaches, pitted and diced

1 tablespoon honey (substitute with maple syrup for a vegan alternative)

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (to form a slurry)

1 teaspoon sesame oil

A pinch of salt

1 head of iceberg lettuce or butter lettuce, leaves carefully separated

1 cup shredded carrots

1 red bell pepper, thinly sliced

¼ cup fresh cilantro, chopped
