Ingredients

For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

Juice of 1 lime

For the Blueberry Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup fresh blueberries

1/4 cup carrots, grated

1/4 cup red onion, thinly sliced

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and black pepper, to taste

For the Tacos:

8 small corn tortillas

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions

Prepare the Shrimp: In a medium mixing bowl, whisk together the olive oil, minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Add the shrimp to the bowl and toss until they are coated evenly with the spice mixture. Squeeze the juice of one lime over the shrimp and let them marinate for 15 minutes to absorb the flavors.

Make the Blueberry Slaw: In a large bowl, combine the finely shredded green cabbage, red cabbage, fresh blueberries, grated carrots, and thinly sliced red onion. In a small bowl, mix together the mayonnaise, apple cider vinegar, honey, salt, and black pepper until smooth. Pour the dressing over the slaw mixture and toss gently until everything is well combined. Taste and adjust the seasoning, if necessary, then set aside.

Cook the Shrimp: Heat a skillet over medium-high heat. Once it is hot, add the marinated shrimp in a single layer. Cook the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque, indicating they are fully cooked. Remove the skillet from heat.

Warm the Tortillas: In a separate dry skillet on medium heat, place each corn tortilla one at a time, warming them for about 30 seconds on each side until they become warm and pliable. Keep them covered to retain heat while you finish the rest.

Assemble the Tacos: Take a few pieces of cooked shrimp and place them on each tortilla. Generously top with the blueberry slaw. Finish with a sprinkle of freshly chopped cilantro and serve with lime wedges on the side for an extra burst of flavor.

Enjoy: Serve the tacos immediately while they are warm. Encourage everyone to squeeze fresh lime juice over their tacos to elevate the flavors!
