1 pound shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

8 small corn tortillas

1 cup red cabbage, finely shredded

1 cup green cabbage, finely shredded

1/2 cup carrots, grated

1/4 cup fresh cilantro, roughly chopped

Juice of 2 lemons

2 tablespoons honey

1/4 cup Greek yogurt or sour cream (optional)

Fresh avocado slices, for serving

Lime wedges, for serving

Instructions
 

Prepare the Shrimp: In a medium mixing bowl, combine the peeled and deveined shrimp with olive oil, smoked paprika, garlic powder, ground cumin, salt, and freshly ground black pepper. Toss gently until each shrimp is evenly coated with the spice mixture. Allow the shrimp to marinate for approximately 15 minutes while you prepare the slaw.

    Make the Lemon Slaw: In a large serving bowl, combine the finely shredded red cabbage, green cabbage, grated carrots, and chopped cilantro. In a separate small bowl, whisk together the fresh lemon juice, honey, and a pinch of salt until well combined. Pour the lemon dressing over the slaw mixture, tossing gently until all the ingredients are coated. Taste the slaw and adjust the seasoning if needed.
