Ingredients

4 cups fresh corn kernels (or frozen corn if out of season)

1 medium onion, finely diced

2 ribs of celery, finely diced

2 medium potatoes, peeled and diced into small cubes

4 cloves of garlic, minced

4 cups vegetable broth (or chicken broth for a non-vegetarian option)

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

¼ cup fresh parsley, chopped (for garnish)

Optional: 1 cup cooked bacon or pancetta, crumbled (for garnish)

Instructions

Prep the Vegetables: Begin by thoroughly washing and peeling the potatoes. Cut them into small cubes to ensure they cook evenly. Rinse and dice the onion and celery into uniform pieces. Finally, mince the garlic cloves finely to enhance the flavor of the chowder.

Combine Ingredients: In a slow cooker, layer your ingredients by adding the corn kernels, diced onion, diced celery, diced potatoes, and minced garlic. Pour in the vegetable broth, then sprinkle in the dried thyme, smoked paprika, and season with salt and pepper. Stir all the ingredients together until well combined.

Slow Cook: Secure the lid on your slow cooker and cook the chowder on the low setting for 6-8 hours, or on high for 3-4 hours. Cook until the vegetables are tender and fragrant.

Blend for Creaminess: Once the cooking time is up, carefully use an immersion blender to puree about half of the chowder. This will create a creamy consistency while still keeping some hearty chunks. If you don’t own an immersion blender, transfer half of the chowder to a regular blender, blend until smooth, then return it to the slow cooker.

Stir in Cream: With the chowder still in the slow cooker, pour in the heavy cream. Stir thoroughly to combine, and let it cook on the low setting for an additional 30 minutes. This step allows the flavors to meld beautifully.

Taste and Adjust: Before serving, taste the chowder and adjust the seasoning with additional salt and freshly ground black pepper, if desired.

Serve: Ladle generous portions of the corn chowder into warm bowls. Garnish each bowl with a sprinkle of fresh chopped parsley and, if you like, add a touch of crumbled bacon or pancetta for a savory finish.
