1.5 lbs boneless, skinless chicken breasts

1 packet ranch seasoning mix

1 cup cream cheese, softened

1 cup chicken broth

1 can (10 oz) diced tomatoes with green chilies, drained

1 cup corn (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 teaspoon minced garlic

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper, to taste

8 small flour or corn tortillas

Toppings: chopped cilantro, diced avocado, shredded cheese, sour cream, and lime wedges

Instructions
 

Prepare the Slow Cooker: Start by spraying the inside of your slow cooker with a light coat of cooking spray. This will help with cleanup later.

    Layer the Ingredients: Lay the chicken breasts flat at the bottom of the slow cooker. Evenly sprinkle the ranch seasoning mix over the chicken, ensuring each piece is well-coated.

      Add Creaminess: Gently place the softened cream cheese on top of the chicken. Pour the chicken broth over the cream cheese and chicken; this will create a luscious, creamy sauce as it cooks.

        Add Vegetables and Seasonings: Carefully add the drained diced tomatoes, corn, black beans, minced garlic, onion powder, cumin, paprika, and season with salt and pepper. Give the mixture a gentle stir to incorporate the veggies without disrupting the chicken too much.
