Ingredients

2 lbs boneless, skinless chicken breasts or thighs

1 cup chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (15 oz) diced tomatoes with green chilies (like Ro-Tel)

2 tablespoons taco seasoning (store-bought or homemade)

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder (adjust to taste)

Salt and pepper to taste

1 tablespoon olive oil

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Tortillas (corn or flour, for serving)

Optional toppings: sliced avocado, shredded lettuce, diced tomatoes, shredded cheese, sour cream

Instructions

Prepare the Chicken: Begin by seasoning the chicken breasts or thighs. Generously sprinkle salt, pepper, and taco seasoning over the chicken, ensuring an even coating for maximum flavor.

Sauté the Aromatics: Heat olive oil in a skillet over medium heat. Once the oil is shimmering, add the finely chopped onion. Sauté for 3-4 minutes, or until the onion is softened and translucent. Stir in the minced garlic and cook for an additional minute, just until fragrant. Transfer the aromatic mixture to the slow cooker.

Combine Ingredients: In the slow cooker, add the seasoned chicken to the sautéed onion and garlic. Pour in the chicken broth and diced tomatoes (including their juices) along with the smoked paprika, ground cumin, and chili powder. Stir everything together until well mixed.

Slow Cook: Cover the slow cooker with its lid and cook on low for 6-7 hours or on high for 3-4 hours. The chicken should be tender and easy to shred when done.

Shred the Chicken: Once the chicken is fully cooked, carefully remove it from the slow cooker and place it on a cutting board. Using two forks, shred the chicken into bite-sized pieces.

Mix it Up: Return the shredded chicken back to the slow cooker. Squeeze the lime juice over the chicken and mix well to combine. Let the mixture sit on the warm setting for about 10 minutes, allowing the flavors to meld.

Serve: Warm the tortillas in a pan or microwave until pliable. To assemble the tacos, place a generous serving of the pulled chicken mixture onto each tortilla. Top with freshly chopped cilantro and any optional toppings you desire.

Enjoy: Serve your tacos immediately, relishing a delicious, homemade meal that's perfect for sharing with family and friends!
