Ingredients

4 bone-in pork chops (approximately 1 inch thick)

1 packet ranch dressing mix (around 1 oz)

1 cup low-sodium chicken broth

1 can (10.5 oz) cream of mushroom soup

1 cup sliced mushrooms (either fresh or canned)

1 medium onion, thinly sliced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon black pepper

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Instructions

Sear the Pork Chops: Begin by heating the olive oil in a large skillet over medium-high heat. While the oil is heating, season both sides of the pork chops with black pepper and paprika for added flavor. Once the oil is hot, carefully place the pork chops in the skillet. Sear them for about 3-4 minutes on each side or until they achieve a golden-brown crust. Once seared, remove the chops from the skillet and set them aside on a plate.

Prepare the Sauce: In a mixing bowl, prepare your sauce by combining the ranch dressing mix, low-sodium chicken broth, and cream of mushroom soup. Whisk the ingredients together until the mixture is smooth and well combined.

Layer Ingredients in Slow Cooker: Start by placing the sliced onions and mushrooms evenly at the bottom of your slow cooker. Next, layer the seared pork chops on top of the vegetables. Finally, pour the creamy ranch mixture over the pork chops, ensuring they are thoroughly coated with the sauce.

Cook: Cover the slow cooker with its lid and set it to cook on low for 6-8 hours, or on high for 3-4 hours. The goal is to allow the pork chops to become tender while the flavors meld together beautifully.

Serve: After cooking, carefully remove the pork chops from the slow cooker using tongs, allowing any excess sauce to drip off. If you prefer a thicker sauce, you can leave the lid off and switch the slow cooker to high for an additional 20-30 minutes. To serve, plate the pork chops and generously spoon the creamy ranch sauce over the top. Finish with a sprinkle of freshly chopped parsley for a pop of color and flavor.
