Ingredients

1 medium spaghetti squash

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned, drained)

1 cup diced tomatoes (fresh or canned, drained)

1 ripe avocado, diced

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, finely chopped

Slices of jalapeño (optional, for extra heat)

Lime wedges, for serving

Instructions

Prepare the Spaghetti Squash:

    - Preheat your oven to 400°F (200°C).

      - Using a sharp knife, carefully slice the spaghetti squash in half lengthwise. Use a spoon to scoop out the seeds and any stringy bits from the center.

        - Drizzle 1 tablespoon of olive oil over the insides of the squash halves and sprinkle with a generous pinch of salt and freshly ground black pepper for flavor.

          Roasting the Squash:

            - Place the squash halves cut side down on a baking sheet lined with parchment paper. This helps to prevent sticking and makes for easier cleanup.

              - Roast in the preheated oven for 30-40 minutes, or until the flesh is tender enough to be easily scraped into strands with a fork.

                - Once roasted, allow the squash to cool for a few minutes before using a fork to gently scrape out the spaghetti-like strands, transferring them to a large mixing bowl.

                  Prepare the Seasoned Filling:

                    - In a large skillet set over medium heat, combine the rinsed black beans, corn, diced tomatoes, ground cumin, chili powder, garlic powder, and a pinch of salt and pepper.

                      - Stir the mixture well and heat it through for about 5-7 minutes, or until it's warmed and fragrant—this allows the flavors to meld together beautifully.

                        Assemble the Burrito Bowls:

                          - Begin by adding a generous portion of the spaghetti squash strands to each serving bowl.

                            - Next, ladle the warm black bean and corn mixture over the squash.

                              - Top each bowl with fresh diced avocado, a handful of shredded lettuce, and a sprinkle of shredded cheese.

                                - Finish by garnishing with freshly chopped cilantro and jalapeño slices, if you enjoy a little extra spice.

                                  Serve:

                                    - Serve each bowl alongside a lime wedge for squeezing over the top, which will add a bright and zesty freshness to your dish. Enjoy your colorful and nutritious spaghetti squash burrito bowls!
