Ingredients

For the Cauliflower Crust:

1 medium head of cauliflower, riced (approximately 4 cups)

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

For the Buffalo Sauce:

1/2 cup hot sauce (recommended: Frank’s RedHot)

1 tablespoon melted butter (or a dairy-free alternative)

1 teaspoon garlic powder

1 teaspoon onion powder

A pinch of cayenne pepper (optional, for an extra kick)

For Toppings:

1 cup shredded mozzarella cheese (for topping)

1/2 cup cooked, shredded chicken (optional)

1/4 cup sliced green onions

1/4 cup ranch or blue cheese dressing (for drizzling)

Fresh cilantro or parsley, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.

Prepare the Cauliflower: Remove the leaves and stem from the cauliflower, and cut it into smaller florets. If using a food processor, pulse the florets until they resemble rice or couscous. Alternatively, you can use a box grater for this step.

Cook the Cauliflower: Place the riced cauliflower in a large microwave-safe bowl. Microwave on high for 6-8 minutes until soft. Allow it to cool for a few minutes before handling.

Make the Cauliflower Crust: After cooling, transfer the riced cauliflower to a clean kitchen towel. Wring it out thoroughly to remove excess moisture. In a mixing bowl, combine the dried cauliflower, mozzarella cheese, Parmesan cheese, eggs, garlic powder, onion powder, salt, pepper, and oregano. Mix everything until thoroughly combined.

Shape the Crust: Pour the cauliflower mixture onto the prepared baking sheet. Using your hands or a spatula, shape it into a pizza crust about 1/2 inch thick. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and firm to the touch.

Prepare the Buffalo Sauce: In a small bowl, whisk together the hot sauce, melted butter, garlic powder, onion powder, and cayenne pepper (if using) until fully mixed and smooth.

Assemble the Pizza: Once the crust is baked, remove it from the oven and brush the buffalo sauce evenly over the surface. If you're adding chicken, scatter the shredded chicken over the sauce. Finally, top with the remaining shredded mozzarella cheese.

Final Bake: Return the assembled pizza to the oven and bake for an additional 10-12 minutes or until the cheese is melted and bubbly.

Garnish and Serve: After baking, remove the pizza from the oven and drizzle with ranch or blue cheese dressing. Sprinkle with sliced green onions and fresh herbs if desired. Allow the pizza to cool slightly, then slice and serve it hot for the best flavor.

Prep Time: 20 minutes | Total Time: 50 minutes | Servings: 4-6 slices

                      - Presentation Tips: For an attractive presentation, serve the pizza on a wooden board, garnished with extra green onions and fresh herbs around the edges. Provide small bowls of ranch or blue cheese dressing alongside for dipping!
