1 cup shelled edamame (fresh or frozen, thawed)

1 red bell pepper, diced

1 medium cucumber, diced

1/4 red onion, finely chopped

1 ripe avocado, diced

Juice of 2 limes

3 tablespoons extra virgin olive oil

1 teaspoon honey (or agave syrup for a vegan option)

Salt and freshly cracked black pepper to taste

    Mix the Base: In a large mixing bowl, combine the cooled corn, shelled edamame, diced red bell pepper, diced cucumber, chopped red onion, and cilantro. Using a large spoon, gently toss the ingredients together to evenly distribute them.
