Ingredients

2 medium sweet potatoes, peeled and cut into 1/2-inch cubes

2 medium apples (such as Honeycrisp or Granny Smith), cored and diced into bite-sized pieces

1 medium red onion, finely chopped

1 bell pepper (any color), diced

3 cloves garlic, minced

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

Salt and pepper, to taste

2 tablespoons olive oil

3 large eggs (optional, for protein)

Fresh parsley or chives for garnish

Instructions

Prepare the Ingredients: Start by peeling the sweet potatoes and cutting them into 1/2-inch cubes. Core the apples and chop them into bite-sized pieces. Set both ingredients aside for use in the skillet.

Sauté the Vegetables: In a large skillet, pour in the olive oil and heat it over medium heat. Once hot, add the finely chopped red onion and diced bell pepper. Sauté these vegetables until they soften and become fragrant, approximately 4-5 minutes.

Cook the Sweet Potatoes: Introduce the diced sweet potatoes to the skillet. Season with salt, pepper, ground cinnamon, and ground nutmeg. Stir the mixture well to ensure the sweet potatoes are coated in the spices. Cover the skillet with a lid and let it cook for about 10-12 minutes, stirring occasionally, until the sweet potatoes are tender and cooked through.

Add the Apples and Garlic: Once the sweet potatoes are tender, add the diced apples and minced garlic to the skillet. Stir well and cook for an additional 5-7 minutes, allowing the apples to soften and become slightly caramelized, mingling their sweetness with the hash.

Optional - Add Eggs: If you choose to include eggs for added protein, use the back of a spoon to create small wells in the hash. Crack an egg into each well gently. Cover the skillet and allow the eggs to cook until the whites are set but the yolks remain runny, about 4-6 minutes. Adjust the cooking time if you prefer your eggs to be more well-done.

Garnish and Serve: Once ready, remove the skillet from heat. Sprinkle freshly chopped parsley or chives over the top for a pop of color and a fresh flavor. Serve the hash hot, either as is or alongside your favorite breakfast sides. Enjoy your delightful Sweet Potato Apple Breakfast Hash!
