1 large sweet potato

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons tahini

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper, to taste

4 large whole wheat tortillas

1 ripe avocado, sliced

1 cup baby spinach or arugula

1/4 cup feta cheese (optional)

Red pepper flakes, for garnish (optional)

Instructions
 

Roast the Sweet Potato: Preheat your oven to 400°F (200°C). Carefully puncture the sweet potato several times with a fork to allow steam to escape during roasting. Place it on a baking sheet and roast for approximately 45 minutes or until it’s tender when pierced with a fork. Once done, remove it from the oven and let it cool slightly. Once cool enough to handle, peel off the skin and set the roasted sweet potato aside.

    Prepare the Hummus: In a blender or food processor, combine the peeled roasted sweet potato, drained chickpeas, tahini, olive oil, fresh lemon juice, garlic powder, ground cumin, and a pinch of salt and pepper.
