14 ounces firm tofu, pressed and drained

2 tablespoons soy sauce

1 tablespoon olive oil

1 tablespoon maple syrup (or agave nectar)

1 teaspoon garlic powder

1 teaspoon smoked paprika

¼ teaspoon black pepper

8-10 skewers (wooden or metal)

For the Watermelon Salsa:

2 cups fresh watermelon, diced (seeds removed)

1 small red onion, finely chopped

1 jalapeño pepper, seeded and diced (adjust spiciness to taste)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste
