Begin by thoroughly washing the cucumber under cool running water. Using a vegetable peeler or mandoline, slice the cucumber lengthwise into thin sheets, aiming for approximately 1/8 inch in thickness. Lay the slices flat on a clean kitchen towel to soak up any excess moisture.

    In a mixing bowl, combine the softened cream cheese, chopped fresh dill, lemon juice, and mustard (if using). Season with a sprinkle of salt and pepper. Use a spatula or fork to mix the ingredients until they are well blended and creamy.

      Take one cucumber slice and lay it flat on a clean work surface. Spread a thin layer of the cream cheese mixture evenly across the entire surface of the cucumber slice.
