Turkey Lettuce Wraps with Lemon Glaze

Ingredients
  

1 pound ground turkey

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 carrot, grated

1 tablespoon soy sauce (or coconut aminos for a gluten-free option)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 tablespoon fresh ginger, grated

Salt and pepper to taste

1 head of butter or romaine lettuce, leaves separated and rinsed

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Optional: crushed peanuts for added crunch

For the Lemon Glaze:

Zest of 1 lemon

Juice of 1 lemon (approximately 2 tablespoons)

2 tablespoons honey or maple syrup

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

Prepare the Lemon Glaze: In a small saucepan, combine the lemon zest, lemon juice, honey, and the cornstarch-water mixture. Cook over medium heat while stirring continuously until the glaze thickens, which should take about 3-4 minutes. Once thickened, remove the saucepan from the heat and set the glaze aside.

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent. Next, add the minced garlic, cooking for an additional 30 seconds until it becomes fragrant.

      Add Vegetables: Raise the heat to medium-high. Introduce the diced red bell pepper and grated carrot into the skillet, cooking for an additional 2-3 minutes until the vegetables have softened.

        Season the Turkey: Push the sautéed vegetables to one side of the skillet, then add the ground turkey to the empty space. Use a spatula to break the turkey apart as it cooks. Season the mixture with soy sauce, hoisin sauce, rice vinegar, grated ginger, and a sprinkle of salt and pepper. Cook until the turkey is fully browned and no longer pink, approximately 5-7 minutes.

          Combine Glaze and Turkey Mixture: Once the turkey is cooked through, pour half of the prepared lemon glaze over the turkey mixture. Toss everything together until well combined, then remove from heat.
