1 medium zucchini, grated (approximately 1 cup)

1 medium apple, peeled and grated (approximately 1 cup)

1 ½ cups rolled oats

½ cup whole wheat flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon nutmeg (optional)

½ cup honey or maple syrup

1 large egg

⅓ cup coconut oil, melted (or unsalted butter)

½ teaspoon vanilla extract

¼ cup chopped walnuts or pecans (optional)

A pinch of salt

½ cup raisins or dried cranberries (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by lining it with parchment paper, ensuring to leave some overhang for easy removal later.

    Prepare the Ingredients: In a mixing bowl, combine the grated zucchini and grated apple. To prevent the bars from becoming soggy, use a clean kitchen towel or cheesecloth to squeeze out any excess moisture from the mixture. Set the drained produce aside.

      Combine Dry Ingredients: In a large bowl, blend the rolled oats, whole wheat flour, baking powder, baking soda, ground cinnamon, nutmeg (if using), and a pinch of salt together. Stir the mixture until all ingredients are thoroughly combined.

        Mix Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), egg, melted coconut oil, and vanilla extract until the mixture is smooth and well blended.
