2 medium zucchinis

2 large carrots

1 red bell pepper, thinly sliced

1 cup cherry tomatoes, halved

½ cup red cabbage, finely shredded

¼ cup green onions, finely chopped

¼ cup fresh cilantro, chopped

¼ cup unsalted peanuts, crushed (optional)

3 tablespoons sesame oil

2 tablespoons soy sauce (or tamari for gluten-free option)

1 tablespoon rice vinegar

1 tablespoon honey or agave syrup

1 teaspoon fresh ginger, grated

1 garlic clove, minced

Prepare the Vegetables: Use a spiralizer or a julienne peeler to create long, noodle-like strands from the zucchinis and carrots. If you don’t have these tools, a regular vegetable peeler can also be employed to make thin ribbons. Set aside the prepared noodles.

    Make the Dressing: In a small mixing bowl, combine 3 tablespoons of sesame oil, 2 tablespoons of soy sauce (or tamari), 1 tablespoon of rice vinegar, 1 tablespoon of honey (or agave syrup), along with the grated ginger and minced garlic.
