2 medium zucchinis, sliced into half-moons

1 lb (450g) chicken breast, diced into bite-sized pieces

1 red bell pepper, diced

1 yellow onion, finely chopped

3 cloves garlic, minced

1 tsp dried oregano

1 tsp smoked paprika

1 tsp cumin

Salt and pepper, to taste

2 tbsp olive oil

1 cup cherry tomatoes, halved

2 cups baby spinach

1/2 cup shredded mozzarella cheese (optional)

Fresh basil leaves, for garnish

Instructions
 

Prepare the Ingredients:

    - Wash the zucchinis and slice them into half-moons.

      - Dice the chicken breast into bite-sized pieces and season with salt and pepper.

        - Finely chop the onion, dice the bell pepper, and mince the garlic.

          - Halve the cherry tomatoes and set aside.

            Cook the Chicken:

              - Heat 1 tablespoon of olive oil in a large skillet over medium heat.

                - Once the oil is hot, add the seasoned chicken pieces.

                  - Sprinkle half of the smoked paprika over the chicken and sauté for about 5-7 minutes, or until the chicken is fully cooked and golden brown.

                    - Remove the cooked chicken from the skillet and set aside on a plate.

                      Sauté the Vegetables:

                        - In the same skillet, add the remaining tablespoon of olive oil.

                          - Add the chopped onion and sauté for approximately 3 minutes until it becomes translucent.

                            - Stir in the diced bell pepper and minced garlic, cooking for an additional 2-3 minutes until fragrant.

                              Incorporate the Zucchini:

                                - Add the sliced zucchini to the skillet, mixing well.
