2 medium zucchini, grated

1 pound chicken breast, diced

1 cup rolled oats

1/2 cup whole wheat flour

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 large egg

Optional: crushed red pepper flakes for an extra kick

Prepare the Zucchini: Start by grating the zucchini using a box grater. To remove excess moisture, place the grated zucchini in a clean kitchen towel, twist the towel and squeeze out as much liquid as possible. This step prevents the patties from becoming soggy.

    Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced chicken breast to the skillet, seasoning it with paprika, Italian seasoning, salt, and pepper. Sauté for approximately 5-6 minutes, stirring occasionally, until the chicken is cooked through and no longer pink. Once done, remove the chicken from the skillet and set it aside.

      Sauté Garlic: Using the same skillet, add the remaining tablespoon of olive oil. After the oil heats up, add the minced garlic and sauté for about 30 seconds or until the garlic is fragrant, being careful not to let it burn.

        Combine Ingredients: In a mixing bowl, combine the prepared grated zucchini, rolled oats, whole wheat flour, mozzarella cheese, Parmesan cheese, chopped parsley, and the cooked chicken. Mix these ingredients thoroughly to ensure an even distribution.

          Mix in the Egg: In a separate bowl, beat the egg until smooth. Add the beaten egg to the zucchini-chicken mixture. Stir well until all ingredients are incorporated; the mixture should be slightly sticky and hold together. If it appears too dry, add a splash of water or broth to achieve the right consistency.

            Form Patties: With lightly greased hands, form small patties from the mixture, each measuring about 2-3 inches in diameter. Ensure they are compact so they hold their shape during cooking.

              Cook the Patties: Return the skillet to medium heat. Place the formed zucchini patties into the skillet, working in batches if necessary to avoid overcrowding. Cook each patty for about 4-5 minutes on one side until golden brown and crispy. Carefully flip the patties and cook for an additional 4-5 minutes on the other side.
