3 medium zucchinis, thinly sliced lengthwise

1 pound ground beef or Italian sausage (or for a vegetarian option, substitute with 1 cup cooked lentils or 8 oz chopped mushrooms)

1 small onion, diced

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 can (15 oz) ricotta cheese

1 large egg

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 tablespoon Italian seasoning

Fresh basil leaves for garnish (optional)

Freshly cracked black pepper to taste

Prepare the Zucchini Noodles: Begin by preheating your oven to 375°F (190°C). Use a mandolin slicer or a sharp knife to carefully slice the zucchinis lengthwise into thin strips. Once sliced, sprinkle the zucchini strips evenly with salt and place them in a colander, allowing them to sit for about 15 minutes. This step helps to remove excess moisture from the zucchini. After 15 minutes, pat the zucchini slices dry using paper towels.

    Cook the Meat Mixture: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent and fragrant, about 3-5 minutes. Incorporate the ground beef or Italian sausage, breaking it apart with a spatula, and cook until fully browned. If there is excess fat, drain it off before returning the skillet to heat.
